Alan’s Magnificent French Toast

It is so easy to impress visitors to our home that are cooking challenged – a certain Aunt springs to mind.

When Aunty and her brood visit I escape to the kitchen and cook home made traditional breakfasts like my secret ingredient oats (a taste of single malt and cinnamon) and Alan’s Magnificent French Toast. After returning to Cape Town (there is NO mountain!) Aunty has tried to serve her brood; “French Toast like Aunty Alan makes”, and failed so here is the recipe again, Aunty – there is no water for you to burn here so it should be easy!

Ingredients:

  • One egg per slice of bread
  • Cinnamon and Sugar mixed
  • Mild Mustard (German or French)
  • Mild cheese sliced
  • Maple Syrup
  • Oil and butter for frying

Method:

  • Beat the eggs well adding cinnamon and sugar to taste
  • Heat the oil and butter in the pan – not smoking hot
  • Dip/Soak two slices of bread in the egg mixture
  • Start frying one slice so that it is just fried and not brown, flip it over and start the next slice
  • Spread mustard to taste on the first slice and lay your cheese slices on it
  • Place the fried section of the second slice on top and flip to cook the remaining section
  • The cheese should just ooze.
  • Place in a warm oven and continue with the remaining pieces.
  • Serve with Alan’s Magic Bacon and Maple Syrup
