Of the dishes on Blue Waters Cafe ‘s menu that are vegetarian the most popular diner’s choice is the Mushroom Risotto.

Asked about the concerns around ‘cross contamination’ from vegetarian diners, Bartho said; “We have colour coded cutting boards and knives in the kitchen and green cutting boards are used for vegetables.”

There are many different diets followed by people who don’t eat meat ranging from a ‘mild’ form to strict vegan that will not eat any animal products of any kind at all. This presents challenges in terms of staff being able to define if a restaurant’s offering will satisfy the diner. so we asked Bartho how staff from Blue Waters Cafe help the diner define their ‘eating niche’?

“We ask them what they would like and make it for them.” said Bartho.

Are diners welcome to visit Blue Waters Cafe’s kitchen? If they like yes. It is not standard operating procedure and I would not allow it when the kitchen is very busy as it would affect the flow..

The Blue Waters Cafe has not experienced a growth in diners avoiding animal products.

Bartho de Vries invites diners to experience Blue Waters Cafe saying; “We have had more requests for Banting than for no meat options.”
