This past weekend I popped my Magic Bacon into the oven and then had a another time saving, healthy option idea – what about baking my eggs?
Ingredients:
- 8 Eggs
- 1 Finely Chopped Tomato
- Herbs
- Cheese
Method:
- Use a muffin pan – I used one of those silicon wonders as it is nice and deep.
- Brush the insides with Melted Butter, Olive Oil or suchlike
- Grate some cheese into the bottom of each pan
- Top with chopped tomato and a sprinkling of herbs – I used Origanum
- Break an egg into each pan and top with grated cheese and more herbs
- Place in a preheated 180 degree oven for 6 to 9 minutes (soft to hard yolk)
Time: 15 minutes

I recently did a variation on my baked eggs recipe:
I mixed some fresh herbs (thyme, basil and oreganum) with some tinned chopped tomato which I spooned into the bottom of the individual muffin trays, grated some cheese on top, sprinkled with fresh herbs and chucked in the oven. In another muffin tray I put some chopped mushrooms sprinkled with Olive Oil and the rest of the chopped tomato mix. The images below show the baked eggs and Alan’s Magic Bacon.
